[TASK] Enable one TransportFactory unit test execution for PHP8.1

Symfony released new versions, which includes a bugfix in
"symfony/mailer", which allows us to reactivate a unit test
for PHP8.1 (#98216), see also issue:
https://github.com/symfony/symfony/issues/47402
