[DOCS] Adjust configuration of manuals and changelog

* Adjusts all configuration files using the main branch
  instead of master
* Makes all "Edit on Github" links in the Changelog and
  System Extension manuals work again after master -
  main switch.
* Fixes all link to Github or Docs using the path
  containing main instead of master
